Passover Recipes - what's the big deal?

If you're anything like Mrs. Wex and the yearly search in the kosher-for-passover aisle of your local supermarket for anything even vaguely edible makes you want to lie down and beat your tiny fists against the floor, then this page is especially for you. Here are some great kosher-for-passover recipes that will help our readers survive the holiday and keep their spouses and families happy.

From Libby's Kitchen

A huge thank you to our dear friend Libby Sklamberg (mother of Lorin whose band The Klezmatics won Best Contemporary World Music Album in the 2007 Grammy Awards for their fantastic album of Woodie Guthrie lyrics Wonder Wheel) who provided us with these great passover recipes:

Passover Popovers - take a break from matzos with this yummy kosher for Passover sandwich substitute.
Noralene's Raw Apple Cake - who can resist this delicious dessert at Pesach?
Martha's Sponge Cake - an old favorite from Libby's childhood friend.
Matzo Charlotte - a recipe Libby learned 50 years ago from the lady who took care of her after the birth of each of her children.
Passover Carrot Pudding - a side dish at Libby's seders for the last 35 years.
Mom's Mustachudos - fabulous Greek Passover cookies.

Robin Young's Passover Kitchen

Robin Young is a great friend to Mr. and Mrs. Wex and we enjoy the company of her family every year at Klezkanada every summer in Quebec. Here are two of her family's favorite recipes:

Matzo Pizza - it's called matzo pizza, but it has no matzos!
Leftover Macaroon Brownie Bars - again, they're called macaroon brownies, but they don't contain macaroons....go figure...
