Chocolate Chip Cookies from Chava's Kitchen

The best kosher for Pesach chocolate chip cookies you can find


Ingredients

2 sticks margarine
1 1/2 cups sugar
2 eggs
1 tbsp orange juice
1/2 cup matzo cake meal
1 tsp potato starch
1 tsp salt
8 oz chocolate chips
1 tsp kosher for Passover vanilla extract or vanilla sugar if available

Preparation

Preheat the oven to 350 degrees fahrenheit. Grease cookie sheets. Cream margarine and sugar. Add eggs and mix well. Add all remaining ingredients except chocolate chips. Mix well. Stir in chocolate chips. Drop by teaspoons onto greased cookie sheets. Bake 20 to 25 minutes, until light brown. Yields about 4 dozen.

These are the best. I have made them with shmura matzah meal - the death of Pesach cakes - and they are still great. If you can find kosher for Pesach brown sugar, substitute 1/2 of the sugar with that. People swear I am feeding the chometz when I make them.
