Noralene's Raw Apple Cake from Libby's Kitchen

A wonderful apple cake recipe for Passover


Ingredients

2 large eggs
2 cups sugar
1/2 cup peanut or safflower oil (use olive or walnut oil if you consider peanut or safflower oil kitniot)
1 tsp kosher for pesach vanilla
2 cups matzo cake flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
4 cups peeled and diced Delicious apples
1 cup coarsely chopped walnuts

Preparation

Preheat the oven to 350 degrees fahrenheit (if you're using a glass baking pan, preheat to 325 degrees). Grease an 8x8-inch baking pan and set it aside. Beat together the eggs, sugar, oil, and vanilla. Add the matzo flour, soda, salt, and cinnamon. Add the apples and nuts. Mix everything all together and pour the mixture into the baking dish. Bake for approximately 1 hour.

You may double the recipe and use a 9x12 inch baking pan.
